Fancy Crêpes

How to make it
- Whisk the flour, salt and sugar together in a bowl, then make a well in the center.
- Crack in the eggs and whisk in a little of the milk to form a smooth paste, then gradually whisk in the remaining milk, the cream and the vanilla until the batter is lump-free.
- Whisk in the melted butter, then cover and rest the batter at room temperature for 30 minutes so the flour hydrates and the crepes turn out tender.
- Heat a nonstick or crepe pan over medium heat and wipe it with a little butter, then pour in a small ladle of batter and immediately swirl the pan to coat the bottom in a thin even layer.
- Cook for about 1 minute until the edges lift and the underside is lightly golden, then loosen with a spatula and flip.
- Cook the second side for 30 seconds, slide the crepe onto a plate, and repeat with the remaining batter, stacking the crepes as you go.
- Serve the crepes warm, folded or rolled around your chosen sweet filling and dusted with sugar.
