Steak Frites

How to make it
- Cut the potatoes into 1 cm batons, rinse off the starch and soak in cold water for 30 minutes, then drain and dry thoroughly on a clean towel.
- Heat the frying oil to 140C and blanch the chips in batches for about 6 minutes until soft but not coloured, then lift out and drain.
- Take the steaks out of the fridge 30 minutes ahead, pat dry and season well, then sear in a smoking-hot pan with the sunflower oil for 2 to 3 minutes per side.
- Add the butter, smashed garlic and thyme, baste the steaks for a final minute to a core temperature of 52 to 54C for medium-rare, then rest on a board for 5 minutes.
- Raise the oil to 180C and fry the chips again for 3 to 4 minutes until deep golden and crisp, then drain and toss with flaky salt.
- Slice the steaks against the grain if you like, pour over the resting juices and serve straight away piled high with the hot frites.
