How to make it

  1. Cut the potatoes into 1 cm batons, rinse off the starch and soak in cold water for 30 minutes, then drain and dry thoroughly on a clean towel.
  2. Heat the frying oil to 140C and blanch the chips in batches for about 6 minutes until soft but not coloured, then lift out and drain.
  3. Take the steaks out of the fridge 30 minutes ahead, pat dry and season well, then sear in a smoking-hot pan with the sunflower oil for 2 to 3 minutes per side.
  4. Add the butter, smashed garlic and thyme, baste the steaks for a final minute to a core temperature of 52 to 54C for medium-rare, then rest on a board for 5 minutes.
  5. Raise the oil to 180C and fry the chips again for 3 to 4 minutes until deep golden and crisp, then drain and toss with flaky salt.
  6. Slice the steaks against the grain if you like, pour over the resting juices and serve straight away piled high with the hot frites.
