How to make it
- Preheat the oven to 200 C (400 F) or heat a grill pan over medium-high heat.
- Slice the french bread on a slight diagonal into pieces about 1.5 cm thick, brush both sides lightly with some of the olive oil, and toast for 5 to 6 minutes until golden and crisp.
- While the bread is still warm, rub one side of each slice with a halved garlic clove for a gentle garlic flavor.
- Dice the roma tomatoes and the fresh mozzarella into small even pieces and combine in a bowl.
- Tear the basil leaves and add to the bowl along with the remaining olive oil, oregano, coarse salt, and black pepper, then toss gently.
- Let the mixture sit for 5 minutes so the flavors meld and the tomatoes release a little juice.
- Spoon the tomato and mozzarella topping generously onto the toasted bread and serve at once before the bread softens.
