How to make it

  1. Slice the tomatoes about 5 mm thick, lay them on a paper-towel-lined tray, sprinkle lightly with salt, and let them drain for 15 to 20 minutes so the galette does not turn soggy.
  2. Preheat the oven to 200 C (400 F) and line a baking sheet with parchment. Unroll the chilled puff pastry onto the parchment and lightly score a 2 cm border around the edge without cutting all the way through.
  3. Stir the mustard powder into the panko along with half of the parmesan, then scatter this mixture evenly inside the scored border to soak up tomato juices.
  4. Pat the tomato slices dry and arrange them in slightly overlapping rows over the crumb layer, season with black pepper, sprinkle with the thyme, drizzle with olive oil, and top with the remaining parmesan.
  5. Beat the egg with a teaspoon of water and brush the exposed pastry border so it browns to a deep golden colour.
  6. Bake for 28 to 32 minutes, until the border is puffed and richly golden and the base is crisp; if the centre releases liquid, tilt the tray to drain it.
  7. Let the galette rest for 5 minutes so the pastry sets, then slide it onto a board, scatter with a few extra thyme leaves, and cut into squares to serve warm.
