How to make it
- Peel the bananas and slice them in half lengthwise, or cut into thick diagonal slices if you prefer bite-sized pieces.
- Melt the butter in a large non-stick frying pan over medium heat, then stir in the brown sugar, cinnamon and a pinch of salt until the sugar dissolves into a bubbling caramel.
- Lay the bananas in the pan in a single layer and cook for about 2 minutes on each side, spooning the caramel over them, until softened and golden but still holding their shape.
- Remove the pan from the heat and stir the vanilla extract into the caramel sauce, taking care as it may sputter.
- Divide the warm bananas between four serving bowls and drizzle the pan caramel over the top.
- Add a scoop of vanilla ice cream to each bowl and serve immediately while the bananas are warm and the ice cream begins to melt into the sauce.
