Fried Cheese Balls with Sausage

How to make it
- In a bowl, mix the raw sausage meat with the grated cheddar, flour, salt and cayenne until thoroughly combined into a firm, cohesive mixture, kneading lightly with your hands.
- Roll the mixture into balls about 3 cm across and place them on a tray; chill for at least 20 minutes so they hold their shape during frying.
- Beat the eggs with the milk in a shallow bowl and spread the cracker crumbs on a plate.
- Roll each ball first in the beaten egg, then in the cracker crumbs, pressing gently so the coating sticks evenly all over.
- Heat the oil in a deep, heavy pan to 175 C, checking with a thermometer or by dropping in a crumb to see that it sizzles steadily.
- Fry the balls in small batches for 4 to 5 minutes, turning so they brown evenly, until the coating is deep golden and the sausage inside is fully cooked to at least 75 C with no pink remaining.
- Remove with a slotted spoon and drain on paper towels; let them rest 2 minutes, as the centres stay very hot, then serve warm with a dipping sauce.
