Jalapeno Eggs

How to make it
- Chop the bacon into small pieces and fry in a skillet over medium heat until crisp, then remove to a plate, leaving a little fat in the pan.
- Add the diced onion to the pan and cook for about 5 minutes until softened, then stir in the baked beans and warm through.
- Crack the eggs into a bowl, season with salt and pepper and beat well, then stir in the chopped pickled jalapenos.
- Pour the egg mixture into a separate buttered nonstick pan over medium-low heat and stir gently and continuously until softly scrambled and just set, with no runny liquid remaining.
- Scatter the shredded cheese and crisp bacon over the eggs and let the cheese melt for a moment off the heat.
- Meanwhile, toast the whole-wheat bread and spread with margarine.
- Divide the warm beans and the jalapeno scrambled eggs over the toast and serve immediately while hot.
