How to make it

  1. Chop the bacon into small pieces and fry in a skillet over medium heat until crisp, then remove to a plate, leaving a little fat in the pan.
  2. Add the diced onion to the pan and cook for about 5 minutes until softened, then stir in the baked beans and warm through.
  3. Crack the eggs into a bowl, season with salt and pepper and beat well, then stir in the chopped pickled jalapenos.
  4. Pour the egg mixture into a separate buttered nonstick pan over medium-low heat and stir gently and continuously until softly scrambled and just set, with no runny liquid remaining.
  5. Scatter the shredded cheese and crisp bacon over the eggs and let the cheese melt for a moment off the heat.
  6. Meanwhile, toast the whole-wheat bread and spread with margarine.
  7. Divide the warm beans and the jalapeno scrambled eggs over the toast and serve immediately while hot.
