Grilled Pork Chops

How to make it
- In a saucepan, warm the water with the salt, 2 tablespoons of the honey, the apple cider vinegar, one sprig of rosemary, two sprigs of thyme, half the garlic and the cayenne, stirring just until the salt dissolves; do not boil.
- Remove from the heat and stir in the ice to chill the brine quickly, then submerge the pork chops and refrigerate for at least 1 hour and up to 4 hours.
- Lift the chops from the brine, pat them thoroughly dry with paper towels, and let them sit at room temperature for about 20 minutes while you heat the grill to medium-high (around 220C / 425F).
- Rub the chops with olive oil and the remaining garlic, strip the leaves from the remaining rosemary and thyme and press them onto the meat, then season with black pepper.
- Grill the chops for 4 to 5 minutes on the first side without moving them so they develop clear sear marks.
- Flip the chops, brush the seared side with the remaining 1 tablespoon of honey, and continue grilling for another 4 to 6 minutes until the internal temperature at the thickest point reaches 63C (145F).
- Transfer the chops to a board, tent loosely with foil and rest for at least 5 minutes so the juices redistribute and the temperature holds before serving.
