How to make it

  1. Rinse the lentils under cold running water and pick out any small stones or debris.
  2. Peel and finely chop the onion and garlic, dice the carrot, and cut the smoked pork belly into 1 cm cubes.
  3. Heat the olive oil in a large pot over medium heat, then brown the pork belly for a few minutes before adding the onion, carrot, and garlic and softening for about 5 minutes.
  4. Add the lentils, water, and bay leaf, bring to a boil, then reduce to a gentle simmer and cook uncovered for 20 minutes.
  5. Peel and cube the potatoes, add them to the pot, and continue simmering for a further 15 to 20 minutes until both lentils and potatoes are tender.
  6. Slice the scalded sausages into thick rounds and add them for the final 8 to 10 minutes, simmering until heated through to at least 74 C in the centre.
  7. Season the stew with salt and black pepper to taste, remove the bay leaf, and let it rest for a few minutes before serving so the flavours meld.
