Lentil and Sausage Stew

How to make it
- Rinse the lentils under cold running water and pick out any small stones or debris.
- Peel and finely chop the onion and garlic, dice the carrot, and cut the smoked pork belly into 1 cm cubes.
- Heat the olive oil in a large pot over medium heat, then brown the pork belly for a few minutes before adding the onion, carrot, and garlic and softening for about 5 minutes.
- Add the lentils, water, and bay leaf, bring to a boil, then reduce to a gentle simmer and cook uncovered for 20 minutes.
- Peel and cube the potatoes, add them to the pot, and continue simmering for a further 15 to 20 minutes until both lentils and potatoes are tender.
- Slice the scalded sausages into thick rounds and add them for the final 8 to 10 minutes, simmering until heated through to at least 74 C in the centre.
- Season the stew with salt and black pepper to taste, remove the bay leaf, and let it rest for a few minutes before serving so the flavours meld.
