How to make it
- If using frozen corn, thaw it fully, and if using canned corn, drain it well, then pat the kernels dry on paper towels so the coating will stick.
- In a bowl, beat the eggs with the milk to make an egg wash, and in a separate shallow dish whisk together the flour, salt, pepper, garlic powder, paprika and MSG.
- Heat the oil in a deep heavy pot or skillet to 350°F, using enough oil to submerge the corn.
- Working in batches, toss a handful of corn kernels in the egg wash, lift them out so excess drips off, then dredge them in the seasoned flour until lightly coated.
- Carefully lower the coated corn into the hot oil and fry for 2 to 3 minutes until golden and crisp, stirring gently to keep the clusters from sticking together.
- Remove the fried corn with a slotted spoon and drain on paper towels, then season with a little extra salt while hot and serve right away.
