How to make it

  1. Rinse the okra, pat it completely dry, then trim off the stem ends and slice the pods crosswise into rounds about 1 cm thick.
  2. Place the sliced okra in a bowl, pour over the buttermilk, and toss so every piece is coated; let it soak for 10 minutes while you set up the coating.
  3. In a separate shallow bowl, whisk together the cornmeal, flour, garlic powder, smoked paprika, cayenne, salt, and black pepper.
  4. Lift the okra from the buttermilk in batches, letting the excess drip off, then dredge in the cornmeal mixture until thoroughly coated, shaking off any loose meal.
  5. Pour the oil into a deep, heavy skillet to a depth of about 4 cm and heat over medium-high until it reaches 180 C, or until a pinch of coating sizzles immediately.
  6. Fry the okra in small batches, without crowding the pan, for 3 to 4 minutes, turning once, until the coating is deep golden and crisp.
  7. Remove with a slotted spoon, drain on a wire rack or paper towels, season with a little more salt while hot, and serve immediately.
