How to make it
- In a saucepan, whisk together the sugar, cornstarch, salt, and ground ginger, then gradually whisk in the fruit nectar until smooth.
- Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a gentle boil, then let it bubble for 1 minute.
- Lightly beat the egg yolks in a bowl, temper them by whisking in a ladleful of the hot mixture, then return everything to the pan and cook for 2 minutes more, stirring, until thick and glossy.
- Remove from the heat, stir in the lime juice, and transfer to a bowl to cool to room temperature, pressing plastic wrap onto the surface to prevent a skin from forming.
- Beat the egg whites in a clean bowl until they hold stiff, glossy peaks.
- Gently fold the cooled fruit mixture into the beaten egg whites in batches until the whip is light, airy, and evenly combined.
- Spoon into four serving glasses and chill for at least 1 hour before serving.
