How to make it

  1. In a large bowl whisk together the flour, baking powder, and salt until evenly combined.
  2. Cut the shortening into the dry ingredients with your fingertips or a fork until the mixture resembles coarse crumbs.
  3. Pour in the hot water a little at a time, stirring with a spoon, until a soft, slightly sticky dough comes together; be careful as the water is hot.
  4. Knead the dough briefly in the bowl just until smooth, then cover and let it rest for about 20 minutes so the gluten relaxes.
  5. Divide the dough into four equal balls and, on a floured surface, pat or stretch each into a flat round roughly 1 cm thick, poking a small hole in the center to help it cook evenly.
  6. Heat the oil in a deep heavy pan to about 180 C, testing with a scrap of dough that should sizzle and rise immediately.
  7. Fry each round for about 1 to 2 minutes per side, turning once, until puffed and golden brown, then drain on paper towels and serve warm with savory toppings or a dusting of sugar.
