How to make it
- In a large bowl whisk together the flour, baking powder, and salt until evenly combined.
- Cut the shortening into the dry ingredients with your fingertips or a fork until the mixture resembles coarse crumbs.
- Pour in the hot water a little at a time, stirring with a spoon, until a soft, slightly sticky dough comes together; be careful as the water is hot.
- Knead the dough briefly in the bowl just until smooth, then cover and let it rest for about 20 minutes so the gluten relaxes.
- Divide the dough into four equal balls and, on a floured surface, pat or stretch each into a flat round roughly 1 cm thick, poking a small hole in the center to help it cook evenly.
- Heat the oil in a deep heavy pan to about 180 C, testing with a scrap of dough that should sizzle and rise immediately.
- Fry each round for about 1 to 2 minutes per side, turning once, until puffed and golden brown, then drain on paper towels and serve warm with savory toppings or a dusting of sugar.
