How to make it
- Preheat the oven to 175 C (350 F) and line an 8-inch square baking tin with parchment paper, leaving an overhang for easy lifting.
- Melt the butter in a saucepan over low heat, then remove it from the heat and whisk in the sugar and cocoa powder until smooth and glossy.
- Allow the mixture to cool for a few minutes, then beat in the eggs one at a time along with the vanilla essence until the batter is thick and shiny.
- Add the flour and salt and fold them in gently with a spatula just until no dry streaks remain, taking care not to overmix.
- Scrape the batter into the prepared tin and spread it into an even layer with the spatula.
- Bake for 22 to 25 minutes, until the top is set and a skewer inserted into the centre comes out with a few moist crumbs rather than wet batter.
- Let the brownies cool completely in the tin before lifting them out and cutting into squares for clean, fudgy slices.
