How to make it
- Warm the olive oil in a large pot over medium heat, then add the red onion and bell pepper and cook for 6 to 7 minutes until soft and starting to caramelize.
- Stir in the garlic and cook for 30 seconds, then add the smoked paprika and stir for a few seconds until fragrant, taking care not to let it scorch.
- Crumble in the saffron threads, pour in the sherry and let it bubble for 1 to 2 minutes to cook off the alcohol while scraping up any bits from the bottom of the pot.
- Add the chopped tomatoes, vegetable stock, bay leaf and halved new potatoes, then bring to a simmer.
- Cover and cook gently for about 15 minutes, then stir in the chickpeas and continue simmering uncovered for another 10 to 15 minutes until the potatoes are tender and the stew has thickened.
- Remove the bay leaf and season the stew generously with salt and black pepper to taste.
- Scatter the chopped parsley over the top and serve hot with crusty bread to soak up the sauce.
