How to make it

  1. Preheat the oven to 200 C and zest one lemon, then juice both lemons into a bowl.
  2. Whisk the lemon juice and zest with the olive oil, minced garlic, basil, cayenne, salt and pepper to make a marinade.
  3. Toss the chicken breasts in half the marinade and let them sit for at least 20 minutes while you peel and cut the potatoes into thick wedges.
  4. Toss the potato wedges with the remaining marinade and spread them in a single layer in a roasting dish, then roast for 15 minutes to give them a head start.
  5. Nestle the marinated chicken among the potatoes, pour over any remaining marinade, and roast for 25 to 30 minutes.
  6. Check that the chicken is cooked through to an internal temperature of 74 C and the juices run clear, and that the potatoes are golden and tender.
  7. Let the chicken rest for 5 minutes, then scatter with chopped parsley and serve with extra lemon wedges.
