Garlic Lemon Chicken

How to make it
- Preheat the oven to 200 C and zest one lemon, then juice both lemons into a bowl.
- Whisk the lemon juice and zest with the olive oil, minced garlic, basil, cayenne, salt and pepper to make a marinade.
- Toss the chicken breasts in half the marinade and let them sit for at least 20 minutes while you peel and cut the potatoes into thick wedges.
- Toss the potato wedges with the remaining marinade and spread them in a single layer in a roasting dish, then roast for 15 minutes to give them a head start.
- Nestle the marinated chicken among the potatoes, pour over any remaining marinade, and roast for 25 to 30 minutes.
- Check that the chicken is cooked through to an internal temperature of 74 C and the juices run clear, and that the potatoes are golden and tender.
- Let the chicken rest for 5 minutes, then scatter with chopped parsley and serve with extra lemon wedges.
