How to make it
- Peel and finely mince the garlic, then deseed and finely chop the green chili so the heat is evenly distributed through every bite.
- Slice the tomatoes thinly and lay them on a plate; sprinkle lightly with salt and let them sit for a few minutes, then blot off excess moisture so the sandwich does not turn soggy.
- Grate or thinly slice the extra mature cheddar and divide it between four of the bread slices.
- In a small bowl whisk together the olive oil, lemon juice, minced garlic, chopped chili, and a pinch of salt and pepper to make a quick dressing.
- Drizzle a little dressing over the cheese, arrange the tomato slices on top, then close each sandwich with a remaining bread slice.
- Brush the outsides of each sandwich lightly with the remaining dressing and press gently so the layers hold together.
- Toast in a dry or lightly oiled pan over medium heat for 3 to 4 minutes per side, pressing occasionally, until the bread is golden and crisp and the cheddar has fully melted; cut in half and serve warm.
