How to make it

  1. Peel and finely grate the ginger, then place it in a saucepan with 2 cups of the water and the sugar; bring to a boil and simmer for 5 minutes to make a syrup.
  2. Remove from the heat, stir well, and let the ginger syrup cool to lukewarm (no warmer than body temperature, or it will kill the yeast).
  3. Strain the syrup through a fine sieve into a clean jug, pressing the ginger to extract all the flavor, then stir in the remaining 3 cups of cool water and the juice of the lemon.
  4. Sprinkle the yeast over the liquid, stir gently to dissolve, and pour into a clean plastic bottle, leaving a few inches of headspace at the top.
  5. Cap the bottle loosely and leave it at room temperature for 24 to 48 hours, checking daily by gently squeezing the bottle; it is ready when it feels firm and carbonated.
  6. Refrigerate the ginger beer to halt fermentation, then open carefully over a sink to release pressure and serve well chilled over ice.
  7. Drink within a week and burp the bottle daily while stored, as continued fermentation builds pressure that can cause the bottle to burst.
