How to make it

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, ground ginger, cinnamon, and salt until evenly combined.
  2. In a separate bowl, beat the eggs, then whisk in the buttermilk, milk, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a few strokes just until combined, leaving the batter lumpy and not overmixed so the pancakes stay tender.
  4. Let the batter rest for 5 minutes while you heat a griddle or nonstick skillet over medium heat and lightly grease it with butter or oil.
  5. Pour about 1/4 cup of batter per pancake onto the griddle and cook for 2 to 3 minutes until bubbles form across the surface and the edges look set.
  6. Flip each pancake and cook for another 1 to 2 minutes until golden brown and cooked through in the center, then serve warm with butter and maple syrup.
