How to make it

  1. In a large bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, ginger and cloves.
  2. In a separate bowl, whisk the buttermilk, molasses, eggs, melted butter and brown sugar until smooth and evenly combined.
  3. Pour the wet ingredients into the dry and stir gently just until combined, leaving the batter slightly lumpy so the pancakes stay tender.
  4. Let the batter rest for about 5 minutes while you heat a griddle or nonstick skillet over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter per pancake onto the hot griddle, spacing them apart.
  6. Cook for 2 to 3 minutes until bubbles form on the surface and the edges look set, then flip and cook for another 1 to 2 minutes until cooked through and springy in the center.
  7. Keep the finished pancakes warm in a low oven and serve with butter and maple syrup.
