How to make it
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, ginger and cloves.
- In a separate bowl, whisk the buttermilk, molasses, eggs, melted butter and brown sugar until smooth and evenly combined.
- Pour the wet ingredients into the dry and stir gently just until combined, leaving the batter slightly lumpy so the pancakes stay tender.
- Let the batter rest for about 5 minutes while you heat a griddle or nonstick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter per pancake onto the hot griddle, spacing them apart.
- Cook for 2 to 3 minutes until bubbles form on the surface and the edges look set, then flip and cook for another 1 to 2 minutes until cooked through and springy in the center.
- Keep the finished pancakes warm in a low oven and serve with butter and maple syrup.
