How to make it
- Rinse the goat meat well, place it in a large pot with one chopped onion, the garlic, ginger, one crumbled stock cube and a little salt, then add just enough water to cover.
- Bring to a boil, skim off any foam that rises, then cover and simmer for 45 to 60 minutes until the meat is tender, topping up with hot water as needed and reserving the cooking broth.
- While the meat cooks, blend the tomatoes, chili peppers and the remaining onion into a coarse puree.
- Heat the vegetable oil in a separate wide pot over medium heat, then pour in the blended tomato mixture and fry it, stirring often, for 10 to 12 minutes until it thickens and the raw, sour smell cooks off.
- Stir in the curry powder and the second stock cube, then add the cooked goat meat along with about 2 cups of the reserved broth.
- Simmer the stew uncovered for 15 to 20 minutes, stirring occasionally, until the sauce reduces and clings to the meat and the flavors meld.
- Taste and adjust the salt and heat, then serve hot with rice, boiled yam or fufu.
