How to make it

  1. Dissolve the yeast and sugar in the warm water and let it stand for 5 to 10 minutes until foamy, then combine the flour and salt in a large bowl.
  2. Pour the yeast mixture and the oil into the flour and mix to a shaggy dough, then knead on a lightly floured surface for about 8 minutes until smooth and elastic. Cover and let it rest for 45 minutes to 1 hour until relaxed and slightly puffed.
  3. While the dough rests, make the filling by finely chopping the washed spinach and parsley, then mixing them with the crumbled feta until evenly combined.
  4. Divide the dough into four pieces and roll each one out on a floured surface into a very thin, large round or oval, as thin as you can manage without tearing.
  5. Spread a quarter of the filling over one half of each round, then fold the dough over the filling and press the edges firmly to seal into a half-moon or folded parcel.
  6. Heat a dry flat griddle or wide pan over medium heat and cook each gozleme for 2 to 3 minutes per side until golden brown spots appear and the dough is cooked through.
  7. Brush the hot flatbreads generously with melted butter, cut into wedges, and serve immediately while warm and crisp.
