How to make it
- Heat the oven to 200 C and slice the potatoes, zucchini, eggplant and two of the tomatoes into thin rounds about half a centimetre thick, then slice the onion into thin half-moons.
- Spread all the sliced vegetables across a large roasting pan or a deep sheet pan and scatter the thinly sliced garlic over the top.
- Grate or finely chop the two remaining tomatoes and mix with the olive oil, tomato paste, oregano, salt and pepper, then pour this dressing evenly over the vegetables and toss with your hands until everything is well coated.
- Press the vegetables into an even layer, cover the pan tightly with foil, and roast for 45 minutes so they steam and soften.
- Remove the foil, stir gently, and continue roasting uncovered for another 35 to 45 minutes until the edges caramelise and most of the liquid has reduced to a thick, glossy sauce.
- Let the briam rest for 10 minutes, scatter the chopped parsley over the top, and serve warm or at room temperature with crusty bread and feta.
