How to make it
- Soak the dried white beans in plenty of cold water overnight, then drain and rinse them well the next day.
- Put the beans in a large pot, cover with fresh water, bring to a boil and simmer for about 10 minutes, then drain off the starchy foam that can otherwise leave the soup bitter.
- Return the beans to the pot with the chopped onion, diced carrots, sliced celery, garlic and bay leaf, then add enough fresh water to cover by a few centimetres.
- Stir in the chopped tomatoes, tomato paste, oregano and half the olive oil, bring to a simmer and cook partly covered for about 1 hour until the beans are creamy and tender.
- Season generously with salt and pepper only once the beans have fully softened, since salting too early keeps them tough, and add a splash more water if the stew thickens too much.
- Stir in the remaining raw olive oil just before serving, and bring it to the table hot with bread, olives and a few slices of feta.
