How to make it

  1. Trim the silver skin from the pork tenderloins and pat them dry with paper towels.
  2. In a bowl, whisk together the lime juice, honey, apple cider vinegar, apple cider, olive oil, paprika and garlic powder, then season with salt and pepper.
  3. Reserve about a third of the marinade for basting, then pour the rest over the pork in a dish or sealable bag and refrigerate for at least 1 hour, or up to 8 hours.
  4. Heat a grill or grill pan to medium-high and lightly oil the grates; remove the pork from the marinade and let any excess drip off.
  5. Grill the tenderloins, turning every few minutes and basting with the reserved marinade, for about 15 to 20 minutes, until well browned on all sides.
  6. Cook until an instant-read thermometer inserted into the thickest part registers 63 C (145 F).
  7. Transfer the pork to a board, tent loosely with foil and rest for 5 to 10 minutes, then slice across the grain into medallions and serve.
