Grilled Pork Tenderloin

How to make it
- Trim the silver skin from the pork tenderloins and pat them dry with paper towels.
- In a bowl, whisk together the lime juice, honey, apple cider vinegar, apple cider, olive oil, paprika and garlic powder, then season with salt and pepper.
- Reserve about a third of the marinade for basting, then pour the rest over the pork in a dish or sealable bag and refrigerate for at least 1 hour, or up to 8 hours.
- Heat a grill or grill pan to medium-high and lightly oil the grates; remove the pork from the marinade and let any excess drip off.
- Grill the tenderloins, turning every few minutes and basting with the reserved marinade, for about 15 to 20 minutes, until well browned on all sides.
- Cook until an instant-read thermometer inserted into the thickest part registers 63 C (145 F).
- Transfer the pork to a board, tent loosely with foil and rest for 5 to 10 minutes, then slice across the grain into medallions and serve.
