How to make it

  1. Take the steaks out of the refrigerator about 30 minutes before cooking so they come to room temperature, and pat them completely dry with paper towels.
  2. Rub each steak all over with olive oil, then season generously on both sides with salt and freshly ground black pepper.
  3. Preheat a grill or grill pan to high heat until it is very hot, then lay the steaks down and grill undisturbed for about 4 to 5 minutes to develop clear sear marks.
  4. Flip the steaks once and continue grilling for another 3 to 5 minutes, until an instant-read thermometer inserted into the center reads 57°C (135°F) for medium-rare or 63°C (145°F) for medium.
  5. In the last minute of cooking, add the butter, smashed garlic cloves and thyme sprigs to one side of the pan and spoon the foaming, herb-infused butter over the steaks to baste them.
  6. Transfer the steaks to a board or warm plate, loosely tent with foil and rest for 5 minutes so the juices redistribute, then slice against the grain and spoon over any resting juices before serving.
