Grilled Sirloin Steak

How to make it
- Take the steaks out of the refrigerator about 30 minutes before cooking so they come to room temperature, and pat them completely dry with paper towels.
- Rub each steak all over with olive oil, then season generously on both sides with salt and freshly ground black pepper.
- Preheat a grill or grill pan to high heat until it is very hot, then lay the steaks down and grill undisturbed for about 4 to 5 minutes to develop clear sear marks.
- Flip the steaks once and continue grilling for another 3 to 5 minutes, until an instant-read thermometer inserted into the center reads 57°C (135°F) for medium-rare or 63°C (145°F) for medium.
- In the last minute of cooking, add the butter, smashed garlic cloves and thyme sprigs to one side of the pan and spoon the foaming, herb-infused butter over the steaks to baste them.
- Transfer the steaks to a board or warm plate, loosely tent with foil and rest for 5 minutes so the juices redistribute, then slice against the grain and spoon over any resting juices before serving.
