How to make it

  1. Gently combine the ground chuck and ground sirloin in a bowl with the salt, black pepper, garlic powder, and dried rosemary, mixing just until blended to keep the meat tender.
  2. Divide the mixture into 8 equal portions and shape each into a thin patty slightly wider than the buns, pressing a shallow dimple into the centre of each to prevent doming.
  3. Lightly brush the patties with olive oil and heat a grill or grill pan over medium-high until hot.
  4. Grill the sliders for about 2 to 3 minutes on the first side until well marked, then flip and cook another 2 to 3 minutes.
  5. If using cheese, lay a half slice on each patty during the last minute and cook until an instant-read thermometer reads 71 C (160 F) in the centre, as ground beef must be fully cooked through.
  6. Lightly toast the cut sides of the buns on the grill for about 30 seconds until golden.
  7. Set each patty on a bun bottom, add your toppings, cap with the lid, and serve two sliders per person while hot.
