How to make it
- Take the steaks out of the refrigerator about 30 minutes before cooking and pat them thoroughly dry with paper towels so they sear rather than steam.
- Combine the seasoning salt, garlic powder, marjoram, coriander, thyme, savory, basil, and black pepper in a small bowl to make a dry rub.
- Rub each steak all over with olive oil, then press the spice mixture evenly onto both sides and let them sit while you heat the grill.
- Preheat a grill or grill pan to high heat until it is very hot, oil the grates lightly, and lay the steaks down without moving them for 3 to 4 minutes to build a crust.
- Flip the steaks once and grill the second side another 3 to 4 minutes for medium-rare, cooking longer if you prefer them more done, and use a thermometer to reach at least 63 C / 145 F for medium-rare.
- Transfer the steaks to a board, tent loosely with foil, and rest for 5 minutes so the juices redistribute before slicing against the grain and serving.
