How to make it

  1. Take the steaks out of the refrigerator about 30 minutes before cooking and pat them thoroughly dry with paper towels so they sear rather than steam.
  2. Combine the seasoning salt, garlic powder, marjoram, coriander, thyme, savory, basil, and black pepper in a small bowl to make a dry rub.
  3. Rub each steak all over with olive oil, then press the spice mixture evenly onto both sides and let them sit while you heat the grill.
  4. Preheat a grill or grill pan to high heat until it is very hot, oil the grates lightly, and lay the steaks down without moving them for 3 to 4 minutes to build a crust.
  5. Flip the steaks once and grill the second side another 3 to 4 minutes for medium-rare, cooking longer if you prefer them more done, and use a thermometer to reach at least 63 C / 145 F for medium-rare.
  6. Transfer the steaks to a board, tent loosely with foil, and rest for 5 minutes so the juices redistribute before slicing against the grain and serving.
