How to make it
- Finely chop the regular onion, cilantro stems and leaves, and garlic, and seed and finely mince the serrano chile, using less of it if you prefer a milder dip.
- Halve the avocados, remove the pits, and scoop the flesh into a bowl, then mash it with a fork to your preferred texture, leaving it slightly chunky or making it smooth.
- Stir in the chopped onion, cilantro, garlic and serrano chile until evenly distributed through the avocado.
- Add the lime juice, which brightens the flavour and helps slow browning, then fold in the cream for richness.
- Loosen the dip with the milk a little at a time until it reaches a soft, scoopable consistency.
- Season with salt to taste and stir once more, then taste and adjust the lime or chile as needed.
- Serve right away with tortilla chips, or press plastic wrap directly onto the surface and refrigerate for up to a few hours to keep it from oxidising.
