How to make it

  1. Halve the avocados, twist apart, remove the stones and scoop the flesh into a mixing bowl, discarding any browned or fibrous patches.
  2. Mash the avocado with a fork to your preferred texture, leaving a few chunks for body rather than working it completely smooth.
  3. Finely mince the garlic, deseed and finely chop the red chillies, and finely dice the red onion, then stir them through the avocado.
  4. Add the lime juice immediately and fold it in well, as the acid both brightens the flavour and slows the avocado from browning.
  5. Gently fold in the diced tomato and chopped coriander so the tomato stays intact and the mixture does not turn watery.
  6. Season with salt to taste, then taste and adjust with more lime or chilli, balancing the richness, acidity and heat.
  7. Press a sheet of cling film directly onto the surface and chill for up to 30 minutes, then serve fresh with warm tortilla chips.
