How to make it

  1. Heat the oven to 160C (320F) and line two baking sheets with parchment, drawing a 20cm circle on each as a guide.
  2. Whisk the egg whites with a pinch of salt to soft peaks, then add the caster sugar a spoonful at a time, whisking until the meringue is stiff, thick and glossy.
  3. Gently fold the hazelnut meal through the meringue with a large metal spoon, keeping as much air in as possible, then divide the mixture between the two circles and spread into even discs.
  4. Bake for 35 to 40 minutes until the meringue layers are crisp on the outside and feel dry to the touch, then turn off the oven and leave them inside with the door ajar to cool completely.
  5. Dissolve the instant coffee in 1 teaspoon of hot water and let it cool, then whip the cream with the icing sugar to soft peaks and fold the cooled coffee through.
  6. Place one hazelnut meringue disc on a serving plate, spread over two-thirds of the coffee cream, then top with the second disc.
  7. Spread the remaining cream over the top, dust with the cocoa powder through a fine sieve and chill for at least an hour before cutting into 4 wedges so the layers soften slightly for serving.
