How to make it

  1. Beat the softened butter with the granulated sugar and vanilla sugar until pale and creamy, then beat in the egg and a pinch of salt until smooth.
  2. Add the flour and mix gently just until a soft dough forms, then shape into a disc, wrap, and chill in the fridge for about 30 minutes.
  3. Preheat the oven to 180 C and line a baking sheet with parchment; roll out the dough on a floured surface to about 4 mm thick.
  4. Cut the dough into small squares or rounds, place a small spoonful of jam in the centre of each, then fold and pinch the corners over to enclose the filling and form little rolls.
  5. Arrange seam-side down on the baking sheet and bake for 12 to 15 minutes until the edges are lightly golden; leave to cool on the tray for a few minutes before transferring to a rack.
  6. Whisk the powdered sugar with the water to a thin glaze, drizzle over the cooled rolls, and let it set before serving.
