How to make it
- Cream the softened butter and sugar together in a bowl until light and fluffy, then beat in the eggs one at a time followed by the vanilla.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt, then gradually stir the dry mixture into the wet to form a soft dough.
- Gather the dough into a disc, wrap it, and chill in the refrigerator for at least 1 hour so it firms up enough to roll.
- On a lightly floured surface, roll the dough to about 6 mm (1/4 inch) thick and cut into rounds with a cutter or glass, then arrange them on parchment-lined baking sheets.
- Brush the tops lightly with a little beaten egg or water and sprinkle generously with colored sugar or chopped nuts.
- Bake at 180 C (350 F) for 10 to 12 minutes until the edges are just golden, then cool on the sheet for a couple of minutes before transferring to a rack to cool completely.
