How to make it

  1. Scrub the russet potatoes well, leaving the skins on, then cut them into roughly 1.5 cm thick slices or wedges so the pieces cook evenly.
  2. Place the cut potatoes in a bowl of cold water for 10 minutes to rinse off surface starch, then drain and pat them completely dry with a clean towel so they will crisp rather than steam.
  3. Heat the olive oil in a large heavy skillet over medium heat until it shimmers, then add the potatoes in a single layer, working in two batches if needed to avoid crowding the pan.
  4. Cook undisturbed for about 6 to 8 minutes until the underside is deep golden, then turn the pieces and continue frying, turning occasionally, for another 10 to 12 minutes until the potatoes are crisp outside and tender when pierced with a fork.
  5. Season generously with salt and freshly-ground black pepper, tossing to coat, then transfer to a paper-towel-lined plate to drain briefly.
  6. Serve hot with the sour cream on the side and a scattering of chopped chives over the top.
