Hominy Bread

How to make it
- Preheat the oven to 200 C (400 F) and place a greased 20 cm baking dish or cast-iron skillet inside to warm while you mix the batter.
- Melt the butter and set it aside to cool slightly, then in a large bowl whisk together the cornmeal, baking powder, sugar and salt.
- Stir the cooked hominy grits into the dry ingredients, breaking up any large lumps with a fork so the mixture is evenly combined.
- In a separate bowl beat the eggs with the milk, then pour this along with the melted butter into the dry mixture and stir just until you have a smooth, pourable batter.
- Carefully remove the hot dish from the oven, pour in the batter and smooth the top with a spatula.
- Bake for 25 to 30 minutes until the top is golden and a skewer inserted into the centre comes out clean.
- Let the bread rest for 5 minutes, then cut into squares or wedges and serve warm with butter.
