How to make it
- Preheat the oven to 160 C (325 F) and pat the pork butt roast dry with paper towel.
- Combine the flour, ground mustard, dried sage, salt and black pepper, then rub the mixture all over the roast to coat it.
- Heat the vegetable oil in an ovenproof pot or Dutch oven over medium-high heat and sear the roast on all sides until deeply browned, about 8 to 10 minutes total.
- Stir together the applesauce, honey and ground cinnamon, then spoon about half of this glaze over the roast.
- Cover the pot, transfer to the oven and roast for about 2.5 to 3 hours, basting with the remaining glaze every 45 minutes, until the pork is fork-tender and reaches an internal temperature of at least 90 C (195 F) for pulling.
- Remove the roast and let it rest, loosely tented with foil, for 15 minutes.
- Skim any excess fat from the pan juices, then slice or pull the pork and serve spooned with the honey-apple sauce from the pot.
