Honey Gingerbread Cookies

How to make it
- Warm the honey and butter together in a small saucepan over low heat just until the butter melts, then remove from the heat and let cool until lukewarm.
- In a large bowl whisk together the flour, powdered sugar, cinnamon, ginger, cloves, baking soda and salt.
- Stir the cooled honey mixture and the whole egg into the dry ingredients, mixing to a firm, slightly sticky dough.
- Wrap the dough and chill it in the refrigerator for at least 1 hour, or overnight, so the spices develop and the dough firms up.
- Preheat the oven to 180 C and line two baking sheets with parchment. Roll the dough out on a floured surface to about 5 mm thick and cut into shapes.
- Arrange the cookies on the sheets, leaving space between them, and lightly brush the tops with beaten egg white for shine.
- Bake for 8 to 10 minutes until the edges are firm and just beginning to colour; the cookies will still be soft but will harden as they cool.
- Cool on the sheet for 2 minutes, then transfer to a wire rack; store in an airtight tin where they will soften over a day or two.
