How to make it

  1. Heat the oven to 350 F (175 C) and grease and lightly flour a 9 by 13 inch baking pan, tapping out any excess.
  2. Whisk the cake flour, baking powder and salt together in a bowl and set aside.
  3. In a large bowl, beat the eggs with an electric mixer on high speed for 4 to 5 minutes until thick and pale, then gradually beat in the sugar until the mixture is light and ribbony.
  4. Warm the milk and butter together in a small saucepan over low heat just until the butter melts and the mixture is steaming but not boiling, then stir in the vanilla.
  5. Reduce the mixer to low and beat the flour mixture into the eggs just until no streaks remain, then pour in the hot milk and butter and beat briefly until the batter is smooth and thin.
  6. Pour the batter into the prepared pan and bake for 28 to 32 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
  7. Cool the cake in the pan on a wire rack for at least 20 minutes before slicing and serving.
