How to make it
- Heat 1 tablespoon of the oil in a saucepan over medium heat, then add the onion and cook for about 5 minutes until soft and translucent.
- Stir in the garlic, chopped chiles and chili powder and cook for 1 minute until fragrant, then add the tomatoes with a pinch of salt.
- Simmer the sauce uncovered for 12 to 15 minutes, stirring occasionally, until it thickens and the raw tomato edge is gone; keep it warm.
- In a separate skillet, heat a little of the remaining oil over medium heat and warm each tortilla for about 20 seconds per side until soft and pliable, then stack and cover to keep warm.
- Add the rest of the oil to the skillet and fry the eggs over medium heat until the whites are fully set and opaque and the yolks reach your desired doneness, about 3 minutes for runny yolks.
- Lay two warm tortillas on each plate, slide two fried eggs on top, and spoon the warm ranchero sauce generously around and over the whites.
- Scatter chopped cilantro over each serving and add a final pinch of salt before bringing to the table immediately.
