How to make it

  1. Cream the softened butter and superfine sugar together with an electric mixer for about 3 minutes until pale and fluffy, then beat in the egg and vanilla extract until smooth.
  2. Sift the plain flour, cocoa powder, bicarbonate of soda and salt into the bowl and mix on low speed just until a soft, even dough forms; press it into a disc, wrap and chill for at least 30 minutes.
  3. Preheat the oven to 180C (350F) and line two baking sheets with parchment. Roll the dough between two sheets of parchment to about 4mm thick and cut out 16 rectangles roughly 6 by 8 cm, re-rolling scraps as needed.
  4. Transfer the rectangles to the lined sheets, prick each all over with a fork, and bake for 9 to 11 minutes until the edges are set; the centres should still feel slightly soft. Let them firm up on the tray for 5 minutes, then cool completely on a wire rack.
  5. Soften the ice cream at room temperature for 5 to 10 minutes until just spreadable. Place one cooled biscuit flat-side up and spread or scoop a generous 1.5 cm layer of ice cream over it.
  6. Top with a second biscuit flat-side down and press gently so the filling reaches the edges; smooth the sides with a knife. Repeat to make 8 sandwiches.
  7. Wrap each sandwich individually and freeze for at least 2 hours until firm before serving so they hold their shape cleanly when bitten.
