How to make it
- Cut the mixed vegetables such as carrots, beans, potato, cauliflower and peas into bite-sized pieces, then parboil the firmer ones for 4 to 5 minutes until just tender and drain.
- Soak the cashews in hot water for 15 minutes, then blend with a splash of water to a smooth paste.
- Heat the oil and fry the finely chopped onion for 8 minutes until soft and pale, then add garlic, ginger and green chilli and cook for 2 minutes without browning to keep the korma mild and creamy.
- Stir in the coriander, cumin and turmeric for 30 seconds, then add the cashew paste and a splash of water and simmer for 3 to 4 minutes until thickened.
- Fold in the vegetables with about 150 ml water, season with salt, cover and simmer gently for 10 to 12 minutes until everything is tender and coated in sauce.
- Lower the heat, stir through the cream and garam masala, warm through for 2 minutes without boiling hard, and serve with rice or warm flatbread.
