How to make it

  1. Peel and cut the potatoes into 2 cm chunks and break the cauliflower into bite-sized florets, then pat them dry so they brown rather than steam.
  2. Heat the oil in a wide heavy pan over medium-high heat, add the cumin seeds and let them sizzle for 20 seconds, then add the finely chopped onion and fry for 6 to 8 minutes until golden.
  3. Stir in the grated ginger, crushed garlic and sliced green chili for a minute, then add the chopped tomato along with the turmeric, ground cumin, ground coriander and a good pinch of salt and cook until the tomato breaks down.
  4. Add the potatoes and cauliflower and toss to coat them thoroughly in the spice paste, then sprinkle in a couple of tablespoons of water to stop sticking.
  5. Cover and cook over low heat for 18 to 22 minutes, stirring gently every few minutes, until both vegetables are tender and a knife slides easily into the potato.
  6. Uncover, raise the heat and let any excess moisture evaporate so the curry is dry and the edges catch slightly, then stir through the garam masala, adjust the salt and finish with chopped fresh coriander.
