How to make it

  1. Soften the banana leaves by passing them briefly over an open flame or dipping in hot water until pliable, then wipe clean and set aside.
  2. Blend the fresh corn kernels with the chopped onion and a little of the warm water to a coarse paste, then tip into a large bowl.
  3. Stir in the cornmeal, salt and crumbled stock cube, then gradually beat in the rest of the warm water to make a thick, smooth batter.
  4. Warm the palm oil slightly until it liquefies, then beat it into the batter a little at a time until the mixture is evenly coloured and lightens in texture.
  5. Line cups or bowls with the banana leaves, spoon in the batter, then fold the leaves over to enclose each parcel and tie or tuck them securely.
  6. Stand the wrapped parcels upright in a large pot with a few inches of water in the base, cover, and steam over gentle heat for 1 to 1 1/2 hours, topping up the water as needed.
  7. The koki is ready when it is firm and set and a parcel unwraps cleanly from the leaf; let cool slightly before serving warm.
