How to make it
- Peel and finely chop the shallots. Heat the olive oil in a large frying pan over medium heat and soften the shallots for 4 to 5 minutes until translucent.
- Stir in the garlic powder, ground cumin, red pepper flakes, and ground black cardamom, and cook for about 1 minute until fragrant.
- Add the Quorn mince and cook for 5 minutes, breaking it up with a spoon and letting it take on a little colour.
- Stir in the tomato paste and water, then simmer for 8 to 10 minutes until the mixture is thick and the Quorn is heated through, adding a splash more water if it looks dry.
- Finish with the white vinegar to brighten the flavour and season with salt to taste.
- Warm the pitta breads briefly in a dry pan or toaster until soft and pliable, then split each one open to form a pocket.
- Spoon the spiced Quorn into the warm pittas and serve immediately, with salad leaves or a spoon of yoghurt on the side if you like.
