How to make it
- Pat the tilapia fillets dry with paper towels and toss them with the lemon juice, then let them sit for 5 minutes.
- In a shallow dish, combine the cornmeal, flour, salt, black pepper, garlic powder and cayenne pepper.
- Press each fillet firmly into the cornmeal mixture, coating both sides evenly and shaking off any excess.
- Heat the olive oil in a large frying pan over medium-high heat until shimmering, then add the fillets and fry for 3 to 4 minutes per side until the crust is golden and crisp.
- Cook until the fish is opaque and flakes easily, reaching an internal temperature of 63 C (145 F), then drain on paper towels.
- Lightly toast the cut sides of the buns and spread the mayonnaise over the bottom halves.
- Layer a lettuce leaf and tomato slice on each bun, top with a crispy fillet, close the sandwich and serve immediately.
