Nigerian Brown Rice with Vegetables

How to make it
- Rinse the brown rice thoroughly under cold running water until the water runs clear, then drain well and set aside.
- Finely chop the onion and mince the garlic. Peel and dice the carrots, and dice the bell pepper into small even pieces.
- Heat the vegetable oil in a large pot over medium heat, then add the onion and garlic and fry for 2 to 3 minutes until softened and fragrant.
- Stir in the ground crayfish and crumble in the seasoning cubes, cooking for another minute, then add the rinsed rice and stir to coat it in the oil.
- Pour in the water or stock and add salt to taste, bring to a boil, then reduce to a low simmer, cover, and cook for about 40 to 45 minutes, until the rice is tender and the liquid is mostly absorbed; add a splash more hot liquid if the pot dries out before the rice softens.
- About 10 minutes before the rice is done, stir in the diced carrots, bell pepper and green peas so they cook through but keep some bite.
- Once the rice is tender, turn off the heat and let it rest covered for 5 minutes, then fluff with a fork and adjust the salt before serving.
