How to make it

  1. Rinse the brown rice thoroughly under cold running water until the water runs clear, then drain well and set aside.
  2. Finely chop the onion and mince the garlic. Peel and dice the carrots, and dice the bell pepper into small even pieces.
  3. Heat the vegetable oil in a large pot over medium heat, then add the onion and garlic and fry for 2 to 3 minutes until softened and fragrant.
  4. Stir in the ground crayfish and crumble in the seasoning cubes, cooking for another minute, then add the rinsed rice and stir to coat it in the oil.
  5. Pour in the water or stock and add salt to taste, bring to a boil, then reduce to a low simmer, cover, and cook for about 40 to 45 minutes, until the rice is tender and the liquid is mostly absorbed; add a splash more hot liquid if the pot dries out before the rice softens.
  6. About 10 minutes before the rice is done, stir in the diced carrots, bell pepper and green peas so they cook through but keep some bite.
  7. Once the rice is tender, turn off the heat and let it rest covered for 5 minutes, then fluff with a fork and adjust the salt before serving.
