How to make it

  1. Remove the outer leaves and the thick core from the cauliflower, then cut the head into small florets.
  2. Working in batches, pulse the florets in a food processor until they break down into pieces the size of rice grains, taking care not to overprocess into a paste; alternatively grate them on the coarse side of a box grater.
  3. Tip the cauliflower rice onto a clean tea towel and pat dry to remove excess moisture so it fries rather than steams.
  4. Heat the oil in a large frying pan or wok over medium-high heat, add the finely minced garlic, and cook for about 30 seconds until fragrant but not browned.
  5. Add the cauliflower rice and stir-fry for 4 to 6 minutes, tossing frequently, until tender with a little bite and lightly golden in places.
  6. Stir in the vinegar and season with salt and white pepper, cooking for a further minute to drive off the excess moisture.
  7. Remove from the heat, fold through the chopped parsley, and serve at once as a light side in place of rice.
