How to make it
- Remove the outer leaves and the thick core from the cauliflower, then cut the head into small florets.
- Working in batches, pulse the florets in a food processor until they break down into pieces the size of rice grains, taking care not to overprocess into a paste; alternatively grate them on the coarse side of a box grater.
- Tip the cauliflower rice onto a clean tea towel and pat dry to remove excess moisture so it fries rather than steams.
- Heat the oil in a large frying pan or wok over medium-high heat, add the finely minced garlic, and cook for about 30 seconds until fragrant but not browned.
- Add the cauliflower rice and stir-fry for 4 to 6 minutes, tossing frequently, until tender with a little bite and lightly golden in places.
- Stir in the vinegar and season with salt and white pepper, cooking for a further minute to drive off the excess moisture.
- Remove from the heat, fold through the chopped parsley, and serve at once as a light side in place of rice.
