How to make it
- Warm the refried beans in a small saucepan over low heat, stirring occasionally, and add a splash of water if they are too thick to spread.
- Heat the vegetable oil in a skillet over medium-high heat until it shimmers, around 350°F (175°C).
- Fry the corn tortillas one or two at a time for about 1 to 2 minutes per side until golden and crisp, then drain them on paper towels and lightly season with salt.
- Spread a generous layer of the warm refried beans over each crisp tortilla while it is still hot.
- Crumble the queso fresco over the beans, then scatter on the finely chopped onion and diced tomato.
- Top each chalupa with a handful of shredded lettuce and serve immediately while the shell is still crunchy.
