How to make it

  1. Pound the garlic, shallots, chillies and shrimp paste in a mortar into a coarse spice paste, or blitz briefly in a small processor.
  2. Heat 2 tablespoons of oil in a wok over high heat and fry the spice paste for 2 to 3 minutes until darkened and fragrant.
  3. Add the diced chicken thigh and stir-fry for 4 to 5 minutes until fully cooked with no pink inside and the juices run clear (74C / 165F).
  4. Add the cold rice, breaking up any clumps with the back of the spatula, and stir-fry for 3 to 4 minutes so every grain is coated and lightly toasted.
  5. Pour in the kecap manis and soy sauce, toss for another 2 minutes until the rice takes on an even brown colour, then stir through the sliced spring onions and season.
  6. Meanwhile fry the eggs in the remaining oil until the whites are set and the edges crisp but the yolks still soft, about 2 to 3 minutes.
  7. Divide the rice between four plates, top each with a fried egg, and serve with cucumber slices and prawn crackers on the side.
