How to make it
- Cook the egg noodles in boiling water for 2 to 3 minutes until just tender, drain, rinse under cold water to stop the cooking, and toss with a little oil so they do not clump.
- Pound or finely chop the garlic and shallots into a rough paste, and slice the chicken into thin bite-size strips.
- Heat the oil in a wok over high heat, fry the garlic-shallot paste for about 30 seconds until fragrant, then add the chicken and stir-fry for 4 to 5 minutes until cooked through with no pink remaining and the juices run clear (74C / 165F).
- Push the chicken aside, pour in the beaten eggs, let them set briefly, then scramble and break them into the pan.
- Add the shredded cabbage, julienned carrot and chopped pak choi, and stir-fry for 2 minutes so they soften but keep some crunch.
- Tip in the drained noodles, then pour over the kecap manis, soy sauce, oyster sauce and sambal, tossing constantly for 2 to 3 minutes until everything is glossy and evenly coated.
- Season with salt and white pepper, taste and adjust the kecap manis for sweetness, and serve hot topped with fried shallots and a wedge of lime.
